I found this great recipe on world's healthiest foods for vegetarian chili. I double it and make it every time there's a potluck because it's both vegan and gluten-free, so most people can eat it even with dietary restrictions. I always make it without peppers (because ew), cut the amount of onion in half, and put a bowl of cheese on the side in case anyone wants some. :)

I throw the onion in a food processor and use canned beans and tomatoes, so there's pretty much no prep time except to soften the onions before adding the other ingredients. And there's only 5 steps. Talk about a great recipe for those with ADD. There's just a lot of different spices.

Prep and Cook Time: 25-30 minutes

Ingredients:

1 medium yellow onion, chopped
1 medium yellow or red bell pepper, diced
3 cloves garlic, pressed
1 tsp paprika
1 TBS chili powder
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp fennel seeds
1 tsp ground cumin
1/8 tsp cayenne pepper
2 cups cooked or 1 15 oz can (no BPA) kidney beans
1 15 oz can diced tomatoes
Salt, pepper and olive oil to taste
Optional: cooked ground turkey

Directions:


Chop onion and press garlic and let sit for 5 minutes to bring out their hidden health benefits (http://whfoods.com/genpage.php?tname=foodtip&dbid=22).
Healthy Sauté onion and bell peppers for 5 minutes.
Add garlic, spices, tomatoes and kidney beans.
Simmer for 15-20 minutes.
Season to taste with salt, pepper and olive oil.

Cubed eggplant, well cooked, adds a chewiness that I like in vegetarian chili. Eggplant takes longer to cook than the other ingredients though, so it does add a step. I used to saute it, but microwaving it might work well enough.

Ooh, that sounds cool. I have no idea whether or not I like eggplant. I know my mom hates it. I don't think I'd put it in for a potluck considering that I only make it to appeal to a wider group of people. I don't think one vegetarian has actually showed up to any of them, lol. I'll have to try it eventually though. Thanks for the suggestion.

I make vegetarian chili every week! I put zucchini corn and carrots in mine! Your recipe looks very similar to the one I started with. Good stuff, indeed.

However, I never have enough time to cook. So my I am specialized in fast vegetarian dishes. :D

Here is my recipe for Chili Con Carne:

1. Bake tofu (stuff made from soya) cubes.
