I gotta make a cake for a wedding. Here, cake makes people think of fluffy light spongey cake with whipped cream between each level. But in my family, a cake is more like the Swedish kaffebröd. Anyway, I was told I could do whatever, so long as there were no nuts in it. So I am making a nutless praline rum cake because it preserves well and gets people warm inside.... kaffebröd or not.

I know how to make the pralines... and by that I mean the New Orleans style praline, not the European candy sort.

I know how to make a rum cake from Duncan Hines box mix & vanilla pudding, but there's none of that to be found here.

Also, I haven't eaten rum cake since changing my diet for food intolerances... so I'm pretty sure this full on rum cake is going to mess with my gut and my brain... but I am not going to attempt a dairy, egg, gluten and milk-free praline rum cake.

Bake the cake, and THEN drink the rest of the rum! (not the other way around)

I ended up using this classic recipe (http://www.peggysuebrister.com/2012/11/vodka-cake-recipe.html):

Once again this year, I've had requests for my Vodka Christmas Cake recipe so here goes. Please keep in your files as I am beginning to get tired of typing this every year! (Made mine this morning!!!) 1 cup sugar, 1tsp. Baking powder, 1 cup water, 1 tsp. salt, 1 cup of brown sugar, lemon juice, 4 large eggs, nuts, 1 bottle vodka, 2 cups dried fruit. Sample a cup of vodka to check quality. Take a large bowl check the vodka again to be sure it is of the highest quality then repeat. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add 1 teaspoon of sugar. Beat again. At this point, it is best to make sure the vodka is still ok. Try another cup just in case. Turn off the mixer thingy. Break 2 eegs and add to the bowl and chuck in the cup of dried fruit. Pick the fruit up off the floor, wash it and put it in the bowl a piece at a time trying to count. Mix on the turner. If the fried druit getas stuck in the beaterers, just pry it loose with the drewscriver Sample the vodka to test for tonsisticity. Next sift 2 cups of salt, or something. Check the vodka. Now **** shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window. Finish the vodka and wipe the counter with the cat xXx

Ok audience, I ended up make a lemon vodka test cake because I had some lemon vodka from last year I was never gonna use. I wasn't about to waste rum and toffee on a test cake! The verdict is thumbs up... you don't need no box cake.
