View Full Version : What went into the cooking pot (stove top) today?

I'm trying some different veggies in an effort to get well quicker.

So today's effort was:

1/2 an eggplant (peeled)
1/2 zucchini
3 mushrooms
5 small pieces of sweet potato (which didn't fit into the crock pot yesterday
1 red capsicum
5 cherry tomatoes
3 leaves of kale
1 inch of a leek
lemon juice
pepper
1/2 can Italian diced tomatoes
1 cup water mixed with 1 teaspoon low salt chicken stock powder.

All vegetable cubed and browned in 1 tbs of rice bran oil before adding the water, stock power and tinned tomatoes.

Then I put the kale on top, put the lid on and let is cook on the lowest heat.

Was really yummy!

OH and do you like butternut squash? It's full of yummy nutrients. I have a great Fritta recipes with eggs, kale, and butternut squash.

I dunno. I just a lot of stuff in the pot and hoped for the best :)

Rice bran oil....I am not aware if this. Tell me more, T....

We have this stuff called alpha one rice bran oil. It has a high smoke point and contains those plant sterols things for good cholesterol.
