I made this by accident since all I had was greek yogurt instead of regular yogurt, but it is quite good!

6 tbsp (100 mL) vegetable oil
2 lbs. lamb stew meat, in 1 - 2 inch cubes
1 very large Vidalia onion cut into small dice
6 garlic cloves, very finely chopped
1/2 tsp (2 mL) ground ginger
1/4 to (1 to 2 mL) 1/2 tsp cayenne pepper
1 tbsp (15 mL) paprika
1 tsp (10 mL) salt
1 - 2 tsp (2 mL) very coarsely ground black pepper to taste
1 large tub of greek yogurt

Preheat oven to 300F. Heat oil on medium-high in a wide, deep dutch oven. When oil is almost smoking, add onion and garlic, stirring until throughly browned. Remove to bowl with a slotted spoon.

Add as much lamb as will fit in one layer. Stir and fry in batches, if necessary, until browned and sealed, but don't overcook (about 10 minutes). Add all lamb, onion, garlic and other spices and fry. Add greek yogurt

Cover pot with aluminum foil and a tight-fitting lid. Place in oven and cook for 1 1/2 hours.

If not done, add some water (about 2/3 cups) and cook longer until fully tender.

Serve with Indian breads or rice.
