Olive oil
3 mdeium sweet patatos, leave skin on
3 medium patatos, leave skin on
1 large avocado
2 sticks celery
4 tablespoons soy mayonnaise
1 tablespoon soy milk
Juice of 1/2 lime
1 teaspoon seeded honey
1/2 - 1 teaspoon seeded mustard
Brush baking dish with oil. Cut potates into serving size pieces and brush with oil.
Roast at 200 degrees Celsius until tender. Cut avocado and celery into serving size pieces and place in bowl with cold patatoes.
Combine remaining ingredcients and toss through salad.
Serve.
