Chicken Wild Rice Soup
Makes 6 cups
Ingredients:
2 T Margarine
1 T minced onion
¼ C Gravy Flour
4 C Chicken Broth
(Knor boullion cubes – add 2-3 to 4 C water)
2 C Cooked Wild Rice (1 C Raw Wild Rice = 2 C Cooked)
½ t Salt
1 C Half & Half (fat free or regular)
2 T Dry Sherry (OPTIONAL)
½-1 C Grated Carrots
½ C Chopped Celery (nuke in micro so it’s almost done)
3 C chicken (chopped & cooked)
Garnish w/ Slivered almonds
How to Make it:
(1) Melt butter and add onion (sauté until tender)
(2) Add gravy flour and stir
(3) Gradually add broth and stir until it thickens
(4) Stir in carrots, celery, rice, salt & chicken
(5) Simmer for 5 minutes
(6) Fold in half & half
(7) Garnish with slivered almonds
