View Full Version : Layered Tortilla Pie

1 lb. ground beef or sausage (we use half and half)
1 med. chopped onion
1 (8 oz.) can tomato sauce
1 can ripe olives, drained and sliced
1 T. chili powder
1 tsp. salt
1/4 tsp. pepper
6 corn tortilla's, buttered
2 c. shredded cheddar cheese (we prefer pepperjack)
1/2 c. water

Brown meat and inion; drain. Add tomato sauce, olives, chili powder, salt and pepper. In round 2 qt. casserole, alternate layers of tortillas, meat sauce, and 1 1/12 cups shredded cheese. Sprinkle 1/2 cup cheese on top. Pour water at edge of casserole into bottom. Bake, covered, at 400 degrees for 25 minutes. Remove cover; allow to stand 5 minutes before cutting in wedges. Serves 4-6

I make one similar to this..but I dip the tortillas in salsa instead. I guess I'll have to post my version of this one as well..although this one seems easier then

We used to make ours that way but hubby and I are getting older and our stomachs don't handle it well anymore.

I can understand that..although I make my own salsa now..and it's not spicy or hot at a mater of fact it has no peppers in it. It's just tomatoes (burp-less/low acid kind of course ;)) celery, corn (sometimes) and a few sesonings..Hmm guess I need to post this recipe..LOL
