View Full Version : Veggie Dutch treat: Hutspot!

Since simplicity seems to be what y'all crave, here's a Dutch classic that involves no more than 6 (yes, six) ingredients. The traditional Dutch way of having hutspot is with smoked sausage (rookworst) and/or bacon. Feel free to add either of those if you're omnivorous.

2 units* potatoes
2 units carrots
1 unit onions
Salt
Freshly ground pepper
Butter, margarine or oil

Peel potatoes and boil in salted water until crumbly. Peel and dice carrots and onions. Brown onions in butter/oil/whatever until caramellised, then add carrots and enough water to stew for some twenty-five minutes. When the carrots are soft, drain off the liquid - if sufficiently reduced, it should make a nice sweet veggie gravy. Drain the potatoes and mash them together with the carrots and onions. Mix in pepper to taste, and serve with a "dimple", to pour the gravy into.

*To avoid confusion, I'm using proportional measurements; if 1 unit = 1 pound or 1/2 kilo, then this recipe should serve four.
