View Full Version : Fried Green Tomatoe Casserole

I been thinking about inventing this dish. The logic is its a big hassle to batter and fry green tomatoes and you waste a lot of oil in the process. This is experimental and my first attempt:

A green tomatoes is chopped to make about two cups (weight was 278 grams).

To that was added 1 teaspoon of No-salt(a potassium chloride salt substitute).

Allow to stand for and hour to allow juices to be extracted.

Pour off the juice and bring it to a boil. Add 3 tablespoons of cornmeal.(like hotwater cornbread is the logic)

Combine with tomatoes and 2 tablespoon of olive oil. Bake in toaster oven at 350 for 30-60 minutes or until desired tomatoes tenderness.


Not bad. Its not crispy like fired green tomatoes. I think the cornmeal is too low and its naturally hard to get rid of the excess steam in a caserole. So some way to get the tomatoes drier would be usefull. Or aranging a very thin layer in the pan would help. Have some more green tomatoes so will try more ideas.

Sounds pretty good!! I'd have to add some cheese!! MMMM!!

probably have to put the tomatoes in a food dehydrator to dry them out, but that would be alot of work.

Maybe a little time under the broiler to crisp at the end, a few bread crumbs mixed with parmesen on the top??
