I want to share this recipe from my parent's home town in the mexican southwest coast. It;s a good starter appetizer for hot summer days. I hope you enjoy it.

4 cups of cooked cocktail shrimps without tails.
1 large avocado sliced in 8, half moon shape slices .
1/2 medium white onion finely chopped.
The Juice of 4 medium size limes (mexican green lemons)
1 cup of water (or half water and half beer)
1/2 cup of white vinegar.
1/4 lb. of fresh cilantro leaves finely chopped.
1 cup of Ketchup sauce.
1/4 cup of hot mexican sauce: Valentina, Cholula or Tapatio
A few droops of Tabasco sauce.
Salt (Optional)

In a large bowl combine the shrimp, the lime juice, the onion, the cilantro, the vinegar and the water. Stir the mix until the ingredients are well combined. Add the ketchup and the hot mexican sauce, then stir again. Fill up 4 tall old-fashion soda-fountain glasses (Or any other tall glasses) with equal amount of the mix. Top each glass with 2 slices of avocado and enjoy with soda crackers (Mild beer goes really well with this LOL).
Note: You can ad more ketchup for more sweetness and more hot sauce or tabasco to make it more hot.
