View Full Version : Blackberry Upside down cake

You will need:

2- 8" x 2" cake pans.
Parchment paper.
1 Tbsp butter.
4 cups blackberries.
1 cup sugar. (to taste.)
1 box yellow cake mix.

Preheat oven to 375

Butter each cake pan and line with parchment paper. (I use another cake pan to help shape it.)

Butter the parchment paper.

Put 2 cups of berries in each lined pan. sprinkle 1/2 cup of sugar over each pan of berries.

Prepare cake mix according to package instructions.

Divide batter evenly between pans. Spread the batter to the edges.

Bake at 375 for 25 to 30 minutes. It is done when an inserted toothpick comes out clean.

Remove from oven and let cool for 10 minutes or so.

Place a plate on top of each cake and flip it over. (be careful- unless you forgot about it and left it for a long time, it will be hot.)

You can make a pineapple upside down cake pretty much the same way. You don't need parchment paper though. Just melt a cube of butter divided between the pans while the oven is pre-heating. Add some brown sugar to the butter after it has melted. Then arrange pineapple slices, chunks, or the mashed up kind on top to the brown sugar/butter layer, and pour the yellow cake mix on top. Sometimes I put maraschino cherries in the middle of the pineapple slices. Bake and YUMMMM.
