View Full Version : Anti-pasto Pasta Salad

This chilled dish is a favorite at the DoubleG Ranch, especially on the hot summer days. And it has the bonus of being REAL easy. GrafterGal put it together, she gets credit, but she's not here and I am, so there. We make it as a stand-alone dinner, but could be good for a side at large gathering or some dreadful pot-luck you are required to participate in. Besides tasting good it has a lot of visual appeal, as well.

12 oz. Wacky Mac ( multi-color Spiral pasta
4 oz. hard salami, or genoa, sliced
4 oz. ham, sliced
8 oz. horseradish cheddar cheese, sliced
14.5 oz. can artichoke hearts, quartered, water drained
2.5 oz can sliced black olives, drained
6 oz. cherry tomatoes (cherubs), cut in halves
8-10 oz. Artichoke - Parmesan salad dressing (or your fav Italian)

Real simple, boil & drain the pasta. Place in a large bowl. Cut the salami, ham, and cheese slices into small pieces about the size of quarter. Place all the ingredients in the bowl of pasta and stir well.

Cover and chill.

Serves everybody.

Variations: You can use whatever your favorite cold cuts or cheese are, or use green instead of back olives, etc.

We have used grilled chicken breast (cut into small cubes) a feta cheese and it came out tasty, too.
