OMG! A catagory for nothing but recipies. This could get ugly.....

Roasted Red Pepper Chicken Alfredo

2 lbs chicken breast (Boneless/skinless)
1 Onion
1 Red Pepper (or 1 can roasted red peppers)
1 Clove Garlic (chopped)
Alfredo Sauce (I usually get a premade container or doesn't matter, you doctor it up anyways....just a time saver!)
Sliced Mushrooms
Italian Seasoning
Salt & Pepper
Parmesian Cheese

Cook chicken to liking (Grill, pan fry, however). Slice into strips and set aside.

Chop up red pepper, onion and garlic and mushrooms....saute until desired tenderness in butter (or oil for you helthy nuts).

Prepair your Alfredo sauce....add Parmesian Cheese, Italian Seasoning, and S&P. Once this is warm and ready, add your vegi mix directly to sauce.

Cook Alfredo noodles. Strain. Poor sauce over noodles, and top with chicken and more parm cheese. Garnish w/ Parsley.

Its really simple, and everyone seems to love it. Enjoy!


P.S. I just re-read my post, and it seems to read like a VCR Manual. Hope this isn't a problem for anyone! (Or it could just be me!)

Yummy..gotta love them roasted red peppers..and here's an update to an old tried and true chicken alfredo..Double Yummy. :D
