Super Easy Chicken and Cheese Enchiladas

This is super easy and tasty too!
2-3 large boneless chicken breast
1 -8oz pk cream cheese or neurfachel cheese (substiute low fat if you want)
2 cups shredded cheese ( use co-jack or cheddar or mexican style cheese.)
2 cans green or red enchilada sauce ( I use Hatch's sauce, but any will due)
1 pk flour tortillas


Bake chicken in 350 oven until cooked (20 -30 min). Take cooked chicken and shred with food prosesser or fork. In large bowl mix shredded chicken ,cream cheese and 1/2 of cheese untill well mixed. Lay tortilla flat and put 2-3 heaping spoonfulls of chicken mixture on tortilla and roll. Layer rolled enchiladas into deep glass or metal cooking pan. Pour sauce over enchiladas and top with remaining cheese. Bake at 350 for about 30 min until all cheese is melted. Enjoy with spanish rice and a salad for a great meal. Capt Kylos
