Grilled Zucchini Pizza

This looks mighty tasty and simple! I'm gonna try it in the oven, too, and see how it works.

Oh man, now I want to run to the store for more zucchini. Let us know how

I baked some slices of zucchini for dinner last night and thought they were
really tasty. My daughter thought I got too much salt on them. That's what
I get for using garlic salt instead of just garlic eh?

I've been making my own pizza sauce, just diced tomatos or tomato sauce
with some dried Italian spices, and simmered to develop the flavor. Don't
add any sugar so there are practically no carbs.

Your pizza sauce sounds yummy!

I did these tonight and they were EXCELLENT!!!

But, I came across the following recipe prior to cooking them, so I used it as a guideline, instead of the grilled version, since I was baking them.

Some things I'll do differently next time:
  • Won't use any non-stick spray on the pan.
  • Won't brush olive oil on the zucchini slices before putting sauce on it (I think the oils from the cheese, along with the moisture from the zucchini and the sauce, are plenty)
We added a little pizza sauce, fresh chopped garlic, shredded mozzerella, fresh ground pepper, green pepper, onion, and quartered some pepperoni slices. El yummo!!

These would also rock as bite-size appetizers with the smaller zucchinis. I think yellow squash or eggplant would work well, too. This recipe is definitely a keeper!!
