I am looking for time tested, yummy, healthy no meat dish recipes. I would like to plan out my meals. Have a meal schedule, so I don't slack off on cooking dinners. Some lunch recipes would be good to put in there also. Anyone what to share? I will share too. I will look for a good one to post if others will do this with me.

Here's one of our all-time favorites:
* Exported from MasterCook * Tofu Indonesian Style Recipe By :unknown Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup peanut butter 1/4 cup soy sauce 1/2 cup water 1/2 teaspoon sesame oil 1 teaspoon fresh ginger -- chopped 1 teaspoon rice vinegar 1 tablespoon brown sugar 2 cloves garlic -- chopped 1 tablespoon sesame seeds 3 scallions -- sliced 1 pound firm tofu -- cubed Process the peanut butter, soy sauce, water, sesame oil, ginger, garlic, vinegar, and sugar in a small food proccessor or blender. Preheat the oven to 350 degrees. Spoon the liquid mixture into an 8x8 pan. Put the tofu cubes in, and mix gently to cover. Sprinkle scallions and sesame seeds over the top. Bake tofu about 25 minutes, until hot in the center. Serve over rice or chinese noodles and spoon additional sauce over the top. - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 225 Calories; 15g Fat (55.5% calories from fat); 15g Protein; 12g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 1117mg Sodium. Hi Amtram, That sounds so good. I like tofu. I wish my husband did too. Maybe he will after I make your Tofu Indonesian Style recipe! Yay
Here is a recipe a friend gave me that I altered. You get your protein, whole grains, and veggies. It's Yummy and very easy! Lentil Stew 3/4 cup dry lentils 3/4 cup brown rice 1 pkg sliced mushrooms 1 onion chopped 1/2 tsp basil 1/4 tsp garlic salt 1 cup water 1 quart (carton) Organic Tomato & Red Pepper Soup Rinse lentils if out of a bin Boil water. Add ingredients simmer covered for 50 min. stir ocationally |

Hi Cats, Thanks for the tip. I have been looking and I found one recipe that sounds really good, but I need more. It took me 1 hr to find that. Hope some of you share your good ones. Here is the new one that I found. It sounds very yummy.
Cheesy Bean and Cheese Enchiladas Ingredients: 1/2 cup flour 1/2 cup nutritional yeast 1 teaspoon salt 1 teaspoon garlic powder 2 cups water 1 teaspoon mustard 4 tablespoons margarine 10 tortillas 2 small cans enchilada sauce 3 cans beans (white kidney, pinto, black), drained 2 medium onions, chopped 1 can olives, chopped 1/4 cup chopped cilantro, 1/2 cup salsa (optional) Directions: In medium-large saucepan, combine flour, nutritional yeast, salt and garlic powder. Add water and mix thoroughly. Heat on medium heat until bubbling and thick. Remove from heat and add mustard and margarine. Set aside 1/2 cup of cheese sauce in separate container. Add onion, beans, olives, cilantro and salsa to sauce. Mix it up. Pour a 1/2 cup of enchilada sauce in the bottom of a 9x13 pan. Place a tortilla in pan and cover in enchilada sauce. Spoon in filling. Roll and push to one end of pan. Continue until all tortillas filled. Pour the rest of the enchilada sauce on top and then spread reserved cheese sauce on as last step. Bake at 350 degrees Fahrenheit until brown, 30-45 minutes. Makes: 6 servings, Preparation time: 15 minutes, Cooking time: 30-45 minutes |

There are many sites out there for vegetarian recipes. Try: About.com:vegetarian food or: epicurious.com (and look for "vegetarian" or "vegan" foods.) It just takes a bit of trying and then you'll know where they all are. (Oh, and you can sign up for their e-letters, too.) P.S. The following topics are from About.com:vegetarian food. Jeanie's Falafels (from allrecipes) *vegan*
1 (19 ounce) can garbanzo beans, rinsed and drained 1 small onion, finely chopped 2 cloves garlic, minced 1 1/2 tablespoons chopped fresh cilantro 1 teaspoon dried parsley 2 teaspoons ground cumin 1/8 teaspoon ground turmeric 1/2 teaspoon baking powder 1 cup fine dry bread crumbs 3/4 teaspoon salt 1/4 teaspoon cracked black peppercorns 1 quart vegetable oil for frying Directions Mash the garbanzo beans in a large bowl. Stir in the onion, garlic, cilantro, parsley cumin, turmeric, baking powder, bread crumbs, salt and pepper. Do not be afraid to use your hands. Shape the mixture into 1 1/2 inch balls; you should get 18 to 24. If the mixture does not hold together, add a little water. Heat the oil in a deep fryer to 375 degrees F (190 degrees C). Carefully drop the balls into the hot oil, and fry until brown. If you do not have a deep fryer, heat the oil in a heavy deep skillet over medium-high heat. You may need to adjust the heat slightly after the first couple of falafels, and be sure to turn frequently so they brown evenly. Serve on pitas with tzatziki or tahini sauce with lettuce and tomato.

Homemade Black Bean Veggie Burgers (contains egg) (great for freezing)
1 (16 ounce) can black beans, drained and rinsed 1/2 green bell pepper, cut into 2 inch pieces 1/2 onion, cut into wedges 3 cloves garlic, peeled 1 egg 1 tablespoon chili powder 1 tablespoon cumin 1 teaspoon Thai chili sauce or hot sauce 1/2 cup bread crumbs Directions If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. In a medium bowl, mash black beans with a fork until thick and pasty. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans. In a small bowl, stir together egg, chili powder, cumin, and chili sauce. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

Check out this one (vegetarian chili). I am not a vegetarian, but I make it for potlucks in case anyone else is.
I always cut the amount of onion in half (I'm not the biggest fan of them, and they overpower if you don't), and I don't use bell peppers because I don't like them. |
