For an egg substitute:

2 tsp chia seeds, ground
1/4 cup water

Mix and let stand for 5 minutes, or until it becomes thick.

This is equivalent to one large egg.

If cheese is OK, then fondue!

I don't have an exact recipe, just get a few pounds of cheese maybe 1/3 gruyere and 2/3 emmental and chop into rough cubes about 1/2" - 1". Mix together with about a tablespoon of flour, some cayenne pepper to taste, and a dash of granulated garlic (or rub fondue pot with the cut side of a garlic clove).

Heat 3/4 - 1 cup dry white wine in a fondue pot or a small saucepan, add cheese, stirring until melted and smooth. Off heat, and stir in a shot or two of Kirschwasser liquor.

Serve with fresh French baguettes cut into bite-sized pieces. Dip bread into cheese mixture and eat.

Left over cheese can be refrigerated and reheated for more fondue, or use in omelettes or over vegetables such as broccoli.

Obviously this is a rough recipe, if this is your first time, you may need to search the Internet for something with more exact amounts. But after making it for years you learn how you like it and do it by eye.

I made this Chocolate Avocado Cream Pie (recipe from Maple Holistics) and it was really good.


For The Brownie Crust

  • 2 cups walnuts
  • 1 cup dates
  • 1/4 cup cacao powder
  • Pinch of sea salt
For The Cream Filling

  • 2 cups cashews; soaked
  • 2 avocados
  • 1 cup coconut milk*
  • 1/2 cup cacao powder
  • 1/2 cup coconut nectar
  • 1/4 cup coconut oil
  • 1/4 tsp sea salt

Soak cashews for at least 30 minutes.
How To Make The Brownie Crust

1. Add walnuts to food processor and mix together until the big chunks are gone.
2. Add in the rest of the brownie crust ingredients and process until it becomes one big ball of dough.
3. Pat the crust down with your hands or a spoon into a 9in glass pie dish.

Cream Filling

4. Drain and rinse cashews.
5. If you have a regular blender of food process blend the cashews separately, adding a little bit of milk at a time until you have a smooth cashew cream.
6. Then add in the rest of the ingredients and blend until smooth.
7. Freeze for 1 hour.
8. Refrigerate for the remainder of the pie’s life.
